
Getting the Heat Right in Your Rotary Oven
Ever had a batch of bread where the crust is burnt to a crisp but the center is still doughy? It’s a nightmare. Most of the time, it happens because your oven can’t stop heating the second it hits the target temperature. Traditional heating elements are like big old radiators—they hold onto heat way too long. That’s why we use infrared lamps. They don’t mess around. They go from cold to full blast in a few seconds, and more importantly, they stop almost instantly. Why this actually matters Here is the thing: heavy metal coils soak up heat. Even after you flip the switch off, they keep pumping energy into your bread. We call that “overshoot,” and it’s what ruins a perfect bake. Quartz-halogen tubes work differently. They use radiation, not convection. When the controller tells them to stop, they stop. It gives you that second-by-second control that makes the difference between a “pretty good” loaf and a perfect one. Picking the right replacement When you’re looking for a new lamp, keep an eye on the wattage versus the length. If you cram too much wattage into a short tube, you get intense heat, but you’re putting a lot of stress on the quartz. We tweak the alloys in the filament to make sure you get a fast ramp-up without burning through your bulbs every two weeks. And please, check your sockets. If an R7s or SK15 connector is loose, it creates resistance. That resistance turns into heat right at the contact point, and you’ll end up melting your socket long before the lamp actually wears out. A few warnings before you install These lamps are easy to swap out, but they’re a bit finicky. Whatever you do,**don’t touch the glass with your bare hands.**The oils from your skin leave invisible marks that create “hot spots.” Once the oven heats up, those spots cause the glass to crack under the pressure. Use a clean cloth or gloves. Simple, but it saves you a lot of headache. One last tip: take a look at your oven’s internal shielding. If the reflective surfaces are dull or peeling, your lamps have to work twice as hard to do the same job. That kills their lifespan. Keep those surfaces clean, and your lamps will last much longer.
