
Getting the Bake Right: Why We Use Infrared
Ever notice how standard convection ovens can be a bit of a gamble? You’re fighting a constant battle where the crust dries out and gets tough before the center of the loaf even gets warm. It’s frustrating. That’s why we use shortwave halogen infrared lamps. Instead of just blowing hot air around and hoping for the best, infrared energy goes straight into the dough. It’s direct. It’s fast. It hits that target internal temperature quickly, which means you lock in the moisture before the surface has a chance to over-dry. Your bread stays juicy inside, just the way it should be. How it actually works Inside these lamps, there’s a tungsten filament tucked into a quartz envelope with halogen gas. The gas keeps the tungsten moving, which lets the lamp last longer and run much hotter. The result? A concentrated blast of energy that sinks deep into the bread. Because the heat doesn’t have to “travel” through the air first, you spend way less time baking. And since the bake cycle is shorter, less water evaporates from the crumb. You get a better loaf, faster. The nitty-gritty on the hardware We usually go with R7s or SK15 connectors. Why? Because they stay put. In a loud, vibrating industrial kitchen, the last thing you need is a loose connection. We spec these for high wattage so they ramp up almost instantly. But here is a heads-up: these things gethot. Really hot. Especially at the endpoints. If you’re wiring these into a high-voltage system, make sure your sockets and wires can actually handle that heat. If you cut corners here, your insulation will melt, and you’ll be dealing with a mess you don’t want. The trade-off Now, infrared is powerful, but it’s directional. It shoots in a straight line. If your bread isn’t lined up perfectly under the lamp, you’re going to get hot spots. You can’t just throw a massive tray in there and expect IR to do all the heavy lifting on its own. The secret is pairing the lamps with a convection system. Let the IR handle the heavy lifting to lock in the moisture, and let the circulating air make sure the sides of the loaf don’t stay raw. It’s the best of both worlds.
