
Getting Your Oven Temps Right (Even When the Factory is Freezing)
Keeping a convection oven at a steady temperature is a nightmare when your factory floor is swinging from freezing to sweltering. Most standard thermostats are just too slow. They lag. By the time they realize the temp has dropped, you’ve already undershot your target, or worse, you’ve overshot it and scorched the product. We found a better way. Instead of guessing, we use infrared (IR) control to fix the temperature in real-time.
Why air sensors lie to you
Here’s the thing: traditional sensors measure the air. But air is a terrible conductor. If you rely on a thermocouple, the food surface has already cooled down long before the sensor even notices a breeze. Our IR systems change that. They look directly at the surface of the food. The controller sees exactly what the product feels and tweaks the heat instantly. It creates a tight loop. Cold drafts? Someone leaving the door open too long? It doesn’t matter. The system just reacts.
The gear that makes it happen
You can’t just slap a fancy sensor on a slow heater. To make this work, your heating elements need to be snappy. We use short-wave IR emitters or high-density coated elements. They have low thermal mass. In plain English? They heat up and cool down almost the second the power flips. If you try to do this with heavy cast iron elements, you’re going to have a bad time. Those things stay hot long after the power is cut, which leads to that dreaded temperature overshoot.
The “Gotchas”
Nothing is perfect. High-precision IR needs a clear line of sight. If grease or steam builds up on the lens, your readings will start to drift. It’s an annoying reality. You’ll either need a strict cleaning schedule or an air-purge system to keep that window crystal clear. If the lens is dirty, you’re basically back to square one with basic air-temp control. One last tip: wire everything into a fast-switching SSR (Solid State Relay). Mechanical contactors are just too clunky for this. You need those rapid pulses of power to keep your tolerance within +/- 1°C when the fans are cranking.
