
Stop Blaming Yourself for Your Baking Fails
If you’ve ever pulled a loaf out of the oven only to find the bottom is burnt to a crisp while the middle is still raw, your first instinct is probably to blame your technique. You start questioning your kneading or your proofing time. But here’s the thing: it’s usually not you. It’s your oven. Most of the time, the culprit is a heating element that just can’t hold a steady temperature. In a restaurant deck oven, that element does all the heavy lifting. When they get old—or if you swapped them out for some cheap, off-brand versions—you get these wild temperature swings. And that’s how you ruin a perfectly good batch of dough.
It’s all about the spread
People think “power” is the most important part of a replacement element. It isn’t. It’s actually about how that heat spreads across the stone. We build our elements to kill off those annoying cold spots. If the wattage isn’t spread out evenly, you end up with “hot zones.” You know the ones—where one side of the bread looks great and the other looks like it’s been through a campfire. We use specific alloy windings to make sure the heat climbs steadily. This means when you open the oven door and a cloud of heat escapes, the oven doesn’t panic and “overshoot” the temperature while trying to recover. It just settles back in smoothly.
Built to take a beating
Commercial ovens are brutal. They go through constant heating and cooling cycles that would shred a cheap element. To stop them from oxidizing or burning out early, we use high-grade stainless steel or Incoloy sheathing. Now, there’s always a trade-off here. If the sheath is too thick, the oven takes forever to react when you turn the dial. If it’s too thin, it wears out in a month. We spent a lot of time finding the sweet spot. Our replacements are tough enough to run 24/7, but they’re still snappy enough to keep your temperature within a couple of degrees of where you want it.
Getting the fit right
When you go to install these, you want a perfect drop-in fit. If the element is off by even a few millimeters, it won’t sit flush against the deck. That creates a tiny air gap, and air is a terrible conductor of heat. It kills your efficiency. One last tip: make sure your wiring is tight and your terminals are scrubbed clean. Loose connections create resistance, and that’s a great way to melt your wiring before the oven even gets hot.
